FLATBREAD TACOS
– Vegetarian – Gluten Free – Vegan –
This recipe involves very little cooking and a whole lot of partying taste buds. Basically creating bean tacos out of flatbread, you will get all of the nutrients from the major food groups while also cutting back on processed meats and substituting some healthier options. While very easy to make, this dish packs a punch with flavor and the desire to consume more than your body may want to. As long as you are conscious of what you are putting into your tacos, your taste buds and your digestive system will enjoy it as well.
The Ingredients
Flatbread
Canned Pinto Beans
Diced Tomatoes
Sliced Bell Peppers
Taco Seasoning
Shredded Lettuce
Shredded Cheese (Use Dairy-Free Cheese as a vegan alternative)
The Recipe
- Heat one can of pinto beans into a small pot
- Spray cooling pan with cooking oil (like Pam) – set to medium-high heat
- Toss in sliced bell peppers with 1 Tbsp. of water
- Sprinkle in 2 tsp. of Taco Seasonings – Mix thoroughly
- Stir until fully cooked or when all of the water has evaporated
- Microwave 2 pieces of flatbread for 15 seconds
- Place warm flatbread on a plate with the edges pushed up against each other
- Assemble
- Beans
- Bell Peppers
- Diced Tomatoes
- Shredded Lettuce
- Shredded Cheese
- Pat yourself on the back
- Devour the deliciousness
Complete The Meal
To complete the meal you will need to gather the rest of your essential nutrients. Here are some suggestions to include with your Flatbread Tacos:
- A bowl of watermelon and grapes
- Corn tortilla chips and salsa or guacamole
- A large glass of some “High-Quality H20” (The Waterboy 1998)
NOTE: This meal will require a lot of room in your kitchen to make successfully. So, unless you are a neat and tidy chef, be prepared to make a huge mess assembling all of the pieces to this tasty treat. It helps to pile up each used dish in the sink immediately after you are done using it so it stays out of the way. A useful alternative is to just assign someone else to clean up after you while you slave away at making dinner for them – it’s the least they can do!
