Smokey Tempeh Panini

– Vegetarian – Gluten Free – Vegan –

Looking for a great lunch or dinner meal that requires minimal cooking? Look no further! This panini recipe is by far the easiest that I’ve come up with in regards to sandwiches. Each bite gives you a blast of savory flavors and a slight crunch of the toasted bread. I’m already hungry just typing this out. Make sure you set up all of your materials first before you start cooking anything – That’s coming from lots of messy experiences! Enjoy your lunch, warrior.

The Ingredients

Gluten-Free Sourdough Bread

Smokey Tempeh

Spinach (or mixed greens)

Dairy Free Mozzarella Cheese Slices

Tomato

Veganaise (Vegan Mayonaise)

Basil Pesto

The Recipe

  1. PREP ALL MATERIALS BEFORE COOKING ANYTHING
  2. Spread a thin, even layer of basil pesto on ONE slice of bread
  3. Spread a thin, even layer of veganaise on the OTHER slice of bread
  4. Place a slice of cheese on each piece of bread
    1. NOTE: break the slices in half to melt faster!
  5. Place spinach on the “Pesto Bread Slice”
  6. Add sliced tomato on top of the spinach
  7. Fry 2 – 4 slices of smokey tempeh in a greased pan on medium heat
    1. NOTE: it should only take about 1-2 minutes each side to cook completely!
  8. Place cooked tempeh on top of spinach
  9. Complete the panini by adding the “Veganaise Bread Slice” on top
  10. Place sandwich into a greased panini maker on high heat for 4-5 minutes
  11. Pat yourself on the back
  12. Devour the deliciousness

Complete The Meal

To complete the meal you will need to gather the rest of your major food groups. Here are some suggestions to include with your Breakfast Scrambler:

  • A fresh cup of orange or apple juice
  • A bag of baked potato chips
  • A bowl of fresh fruits
  • A hot cup of Green Tea
