Breakfast Scrambler

– Vegetarian – Gluten Free – Vegan –

REAL TALK, this dish is the thing I look forward to every Saturday morning. It is so good and filled with lots of comfort foods that is both tasty and filling. The tater tots are crispy and provide the substance, the smokey tempeh tastes JUST LIKE BACON, the cheese holds it all together and the green peppers provide a fresh touch to your morning. 10/10 would recommend serving for breakfast, brunch, or brinner!

Smokey Tempeh

The Recipe

  1. Evenly place 1/2 bag of frozen tater tots onto a greased cookie sheet/pan
    1. NOTE: cover pan in foil first for easy clean-up
  2. Place tater tot pan in oven at 450 degrees and let cook for 23 minutes (or per bag instructions)
  3. Fry 2 pieces of smokey tempeh in a lightly greased frying pan until golden brown on both sides (about 1-2 min each side)
    1. NOTE: Use plant based butter to grease the pan for richer flavor
  4. Dice a green pepper
  5. Once the tater tots and smokey tempeh are cooked prepare your bowl
  6. Assemble:
    1. Tater Tots
    2. Smokey Tempeh (broken up into smaller pieces)
    3. Dairy-Free Cheese
    4. Green Pepper
    5. Sprinkle of Parsley
  7. Pat yourself on the back
  8. Devour the deliciousness
