Nanie’s Vegetable Soup

– Vegetarian – Gluten Free – Vegan –

Ahhh, yes, the highest level of comfort. This soup is a hearty, filling, and delicious way to warm up and feel all of the comforts of grandma’s house. It’s all in the prep because this dish really only requires your knife skills up front and the heat does the rest. Find your favorite vegetables – or whatever is leftover in the fridge – and dive into a tasty comfort dish that will blast you back to your childhood. My Nanie has perfected it over time and has handed down this family recipe to me to share with the world. Make her proud and eat your vegetables.

The Ingredients

2 bundles of organic Carrots

3 Potatoes/Sweet Potatoes

1 Medium Onion

1 Stalk of Celery

1 medium Zucchini

2 cartons of Vegetable Broth

1 bag of Frozen Peas

2 cans of Great Northern White Beans

1 can of cut Tomatoes (14 oz.)

2 Tbsp. of Olive Oil

2 tsp. Salt

1/2  tsp. Pepper

1 tsp. Thyme

1 tsp. Garlic Powder

1 tsp. Parsley

The Recipe

  1. Rinse and Chop/dice all vegetables into small pieces
    1. Carrots
    2. Celery (leave some leaves on!)
    3. Onion
    4. Potatoes
    5. Zucchini
  2. Rinse beans in a strainer
  3. Place a large pot on the stove set to Medium heat
  4. Cover the bottom with a thin layer of Olive Oil
  5. Stir in Chopped Vegetables (except zucchini, peas, & beans)
    1. Carrots
    2. Celery
    3. Onions
    4. Potatoes
  6. Stir in Seasonings
    1. 2 tsp. Salt
    2. 1/2  tsp. Pepper
    3. 1 tsp. Thyme
    4. 1 tsp. Garlic Powder
    5. 1 tsp. Parsley
  7. After a few minutes, test carrots and see if they are SLIGHTLY tender
  8. Add 1 box of Vegetable Broth
  9. Stir in the rest of the vegetables (don’t take as long to cook)
    1. Zucchini
    2. Beans
    3. Frozen Peas
    4. Whole can of Tomatoes
  10. Add 1/2 can of water (from a now empty tomato can)
  11. Add the second box of Vegetable Broth
  12. Bring soup to a boil
  13. Reduce heat to Medium – Low and let simmer for 45min. – 60 min. (stirring occasionally)
  14. Test carrots to make sure they are tender
  15. Pat yourself on the back
  16. Devour the deliciousness

Complete The Meal

To complete the meal you will need to gather the rest of your major food groups. Here are some suggestions to include with your Nanie’s Vegetable Soup:

  • A small side-salad
  • A bowl of your favorite fruit
  • A glass of juice
  • Seed Crackers and fresh cut, whole-grain bread
  • A large glass of High-Quality H20
